My Favorite “Feed the Freezer” Meals for Summer
Summer is a different kind of eating, and I love it! Lighter meals that let you run around the yard with the kids after dinner, or go for a family walk down to the pond. These are the days! But many summer foods don’t freeze quite as well as wintery casseroles. So here is my list of summer-favorite recipes and tips on how to feed your freezer thought the summer!
Feeding the Freezer
This is what I call it when, instead of just making a tried and true recipe for dinner, I will make a double or triple batch of it one evening. Then I will feed my family one portion, and feed the freezer the other portions. This makes eating at home, together at the table, so much easier! Did you know that eating together as a family has huge impacts on your child (and could even make your discipleship more effective)? I didn’t either! But it motivates me to want to make mealtime that much more of a priority – and that much easier to make happen each day.

Homemade seasoning might seem like a bit extra but it is literally the best taco meat I have ever made. I will batch make the taco meat, portion it out, and freeze it in portions. I’ll also batch make the seasoning in a large batch so I’m not making it fresh each time.
Greek Orzo Stuffed Red Peppers with Lemony Basil Tomatoes
Pasta does not usually freeze well, but something about this twice-baked orzo just works for me. I can’t explain it. I make a big batch of the filling and freeze it with the olives mixed in. Then I crumble fresh feta on top of fresh peppers, and load it up with tomatoes from the garden.
Naan takes a while to perfect but MAN when you get it right it’s just … right. I use it for everything. With Indian food, as a quick pizza crust, as a wrap for deli meat and cheese or veggies. You name it. It freezes incredibly well when wrapped tightly in plastic wrap.
We have loved this recipe! I will make a triple batch of the chicken and marinade, and then feed the family one portion and feed the freezer the rest. I make the rice fresh each time.
This is a newer recipe for me, but it has become a favorite! Elliot can’t eat it (soy allergy) so it doesn’t make it onto the weekly rotation, but it is so easy to chop and freeze all the ingredients. I cut the veggies and chicken, mix up the marinade, mix it all together and freeze on gallon freezer bags.
I used to think meatballs were just for with spaghetti. That was CRAZY thinking. We eat these all the time – in wraps with pesto, on traditional spaghetti, or even as an easy protein for the girls at lunch. I make a huge batch of 60 ish meatballs and freeze them in portions we can use more easily.
In our family we use coconut aminos every time a recipe calls for soy sauce-it’s a great swap for soy allergies!
